  • 6 large organic eggs
  • 1 tablespoon olive oil
  • 1 small yellow onion, chopped
  • 3 small potatoes, very thinly sliced
  • 1/2 cup yellow zucchini or cauliflower, in 1/2-inch pieces
  • 1/4 cup goat cheese, crumbled
  • 1/4 cup pumpkin seeds, toasted

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. In a blender, combine the garlic, olive oil, lemon juice, cilantro, chile, cumin, and salt. Puree until smooth. Taste and adjust salt if necessary. Set aside.
  3. In a medium bowl, whisk the eggs with a small pinch of salt. Set aside.
  4. In a small 8.5-inch ovenproof nonstick skillet over medium-high heat, add the olive oil and chopped onion. Sauté for 5-7 minutes until the onion starts to brown.
  5. Add the sliced potatoes and zucchini (or cauliflower), cover, and cook for another 3 minutes.
  6. Transfer the mixture to a plate and set aside. If using purple potatoes, consider pre-cooking them separately to avoid staining.
  7. Reduce the heat. Return the skillet to the stove, add the eggs, and cook over medium-low heat for about 5 minutes until the eggs are just set.
  8. Drizzle the eggs with a few tablespoons of the cilantro chile sauce. Sprinkle the potato and onion mixture over the top.
  9. Transfer the skillet to the oven and bake for about 9 minutes, or until the frittata is puffed and set.
  10. In the last 2 minutes of baking, crumble the goat cheese and sprinkle the pumpkin seeds on top.
